Creamy Baked Mac and Cheese – The Ultimate Comfort Food

1. Prepare the Oven and Baking Dish

Preheat your oven to 325°F (165°C). Grease a 9 x 13-inch baking dish lightly with butter or nonstick spray and set aside. A well-greased dish helps prevent sticking and ensures your cheesy masterpiece slides out effortlessly.

2. Cook the Pasta

Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook for one minute less than the package instructions—typically about 8 minutes—to achieve a perfect al dente texture. Drain the pasta and toss it with a drizzle of olive oil to prevent it from sticking while you prepare the cheese sauce.

3. Make the Creamy Cheese Sauce

In a large Dutch oven (6–7 quarts works best), melt the butter over medium heat. Once melted, add the flour and cook for 1 minute, whisking constantly to remove the raw flour taste and form a roux.

Gradually whisk in the milk and half-and-half, a little at a time, ensuring a smooth mixture with no lumps. Continue whisking as the sauce heats to a gentle boil over medium heat—this ensures a thick, velvety base.

4. Add Flavor and Cheese

Remove the sauce from heat. Whisk in the Worcestershire sauce, then gradually fold in the Velveeta cubes until fully melted. Add 1 ½ cups of grated cheddar cheese, stirring until the sauce is smooth, creamy, and perfectly cheesy.

Season the sauce with salt, dry mustard, black pepper, and a pinch of nutmeg for subtle warmth and depth.

5. Combine Pasta and Sauce

Add the cooked, drained macaroni into the cheese sauce and stir well, ensuring every piece of pasta is coated with that luxurious cheesy goodness.

6. Assemble and Bake

Transfer the cheesy pasta mixture into your prepared baking dish. Sprinkle the remaining 1 ½ cups of cheddar cheese evenly on top.

Bake in the preheated oven for 15 minutes, or until the cheese is melted and the sauce bubbles around the edges.

Optional: For a golden, crispy topping, place the dish under the broiler for 2–5 minutes, keeping a close eye to avoid burning. The result? A perfectly bubbly, slightly browned, decadent mac and cheese that’s impossible to resist.

Tips for the Perfect Creamy Baked Mac and Cheese

  • Use room temperature dairy and cheese to help the sauce melt smoothly and prevent clumps.

  • Mix cheeses for a richer flavor—feel free to add a little Gruyère or Monterey Jack.

  • Make ahead: Assemble the mac and cheese, cover with foil, and refrigerate up to 24 hours. Bake when ready, adding 5–10 minutes to the cooking time.

  • Add-ins: Crumbled bacon, sautéed onions, or roasted vegetables can elevate your mac and cheese into a heartier meal.
