Slow Cooker Onion Butter Potatoes


 

1. Prep the Ingredients

  1. Wash the baby potatoes and cut them in half, or quarters if they are on the larger side.

  2. Thinly slice the onion and mince the garlic.

2. Assemble in the Slow Cooker

  1. Place the potatoes in the bottom of the slow cooker.

  2. Layer the onions over the potatoes, then sprinkle the garlic, salt, pepper, and thyme evenly on top.

  3. Dot the butter pieces across the potatoes for rich, even flavor.

  4. Pour in the broth if you’re using it—it adds extra moisture and depth.

3. Cook

  • Cover and cook on low for 4–5 hours or high for 2–3 hours, until the potatoes are tender and can be easily pierced with a fork.

4. Serve

  1. Taste and adjust seasoning if needed.

  2. Sprinkle with fresh parsley for a pop of color and freshness.

  3. Serve alongside roasted meats, grilled vegetables, or any main dish that calls for a cozy, buttery side.

  • Swap thyme for rosemary or oregano for a different herbal flavor.
